Low 'n Slow Lowrider Bar

Low 'n Slow Lowrider Bar at the Hotel Chimayo de Santa Fe features authentic lowrider elements crafted by Chimayo specialists. Named after the book "Low 'n Slow - Lowriding in New Mexico" by Jack Parsons and Carmella Padilla, the bar is designed to capture the essence of the low-rider culture - its exuberance, style and artistry. On the street outside the bar will be an exclusive "Lowrider Only" reserved parking space. The bar will showcase Jack Parson's photos, diamond-tuck upholstery, light fixtures made of hub caps and mufflers, tables made of chromed chain-link steering wheels and other elements crafted by Chimayo craftsmen. The bar represents lowrider traditions that are a tribute to New Mexico's Hispanic cultural pride and individuality. Sample innovative concoctions from award-winning mixologists and nibble on authentic home comfort-food plates from our restaurant.

Tia's Cocina Authentic New Mexican Restaurant at the Hotel Chimayo de Santa Fe

Tia's Cocina at Hotel Chimayo de Santa Fe features simple, traditional New Mexican home cooking much like abuela's (grandmother's) kitchen in an atmosphere of rustic intimacy. Heritage Hotels and Resorts has commissioned a local agricultural grower to produce the infamous Chimayo chile which was nearly extinct. The Chimayo chile is a small heirloom chile known for a distinctive robust flavor. Tia's Cocina at the Hotel Chimao de Santa Fe is the exclusive location in Santa Fe where visitors can sample authentic Chimayo chile in rustic village foods using traditional recipes handed down for many generations.
*The first crop of authentic Chimayo chile will be available in the fall of 2011.
